This Highfield accredited course has the option to focus on either the Catering or Manufacturing sector. The objectives of the qualification are to introduce HACCP and support those who are part of the HACCP team.
What is HACCP?
Hazard Analysis Critical Control Points (HACCP) is an internationally recognised method of identifying and managing food safety related risk.
It is a food safety system in which the biological, chemical, and physical hazards are monitored and controlled at all stages along the food journey; from raw material production, procurement and handling, through to manufacturing, distribution and consumption of the finished product.
When HACCP is an active part of your food safety processes it aprovides reassurance to your customers, the public, and regulatory agencies that a food safety program is well managed. Many of the world’s leading food manufacturers and vendors use HACCP.
Course Pre-requisites
It is recommended that learners already hold a Level 2 Award in Food Safety Catering or equivalent.

- Understanding the principles of HACCP
- Recognising the importance of safe limits and taking corrective action
