Accredited through Highfield Qualifications, this 1-day Level 3 HACCP Course has the option to focus on the Catering or the Manufacturing sector. It builds on existing knowledge of food safety, hazards and controls to providing skills to those who are responsible for assisting in the development and maintenance of a HACCP system.
What is HACCP?
Hazard Analysis Critical Control Points (HACCP) is an internationally recognised method of identifying and managing food safety related risk.
It is a food safety system in which the biological, chemical, and physical hazards are monitored and controlled at all stages along the food journey; from raw material production, procurement and handling, through to manufacturing, distribution and consumption of the finished product.
When HACCP is an active part of your food safety processes it aprovides reassurance to your customers, the public, and regulatory agencies that a food safety program is well managed. Many of the world’s leading food manufacturers and vendors use HACCP.
Course Pre-requisites
Whilst not obligatory, it is strongly recommended that learners already hold a Level 3 or Level 4 Award in Food Safety Catering or equivalent, have knowledge of food safety hazards and their controls and have a minimum of Level 2 in literacy/English or equivalent.
Level 3 HACCP Course Contents
- Introduction to HACCP
- Understand the importance of HACCP-based food safety management procedures
- Preliminary HACCP processes – understanding the skills and knowledge needed to implement
- Understanding the hazards and controls at each stage in the catering operation
- How to implement and verify HACCP procedures
This course is delivered over 2 days including a multiple-choice exam on the second day.
